OL-EVE PRODUCTS USED IN RECIPE: OLIVES, EXTRA VIRGIN OLIVE OIL, SEA SALT
INGREDIENTS FOR 4 PERSONS:
- 1 kg salt cod, sliced in big slices (not in salt)
- Flour for battering
- 1 red pepper cut in thin slices
- 1 green pepper cut in thin slices
- 1 big onion chopped
- 1 clove of garlic cut in half
- 2 tsp (tablespoons) caper
- 300 gr cherry tomatoes cut in 4 parts or whole
- 80 gr olives
- Chopped parsley
- 2 tsp (tablespoons) pine nuts
- Extra Virgin Olive Oil
- White Vinegar
- Raw sea salt and peppers
- 1tsp. tablespoon granulated sugar
PREPARATION
Clean the cod slices and carefully remove the bones and skin. Batter them into the flour and fry them in extra virgin
olive oil that has already been heated on the frying pan. Fry for about 20 minutes and turn the slices so that they are
cooked from all sides. Once they are ready, add a little bit of white wine.
On another pan, sauté the onion in the extra virgin olive oil until their colour becomes “rosy”. Then, add the pine
nuts, the sugar and ½ glass of vinegar and let them boil in medium temperature/level for about 5 minutes. In the
end, add the peppers, the caper, the olives and the cherry tomatoes. Fry for about 15 minutes, add sea salt and
pepper. Serve
